You’ve heard about Goji Berries, right?
They’re considered a superfood because of it’s high number of antioxidants.
They’re also called wolfberries, which is very badass.
Viva Labs, once again, providing me with an awesome product that’s Non-GMO, Vegan, Gluten-Free and Organic.
The berries themselves are chewy, as they’re dried (like raisins).
They’re a bit sweet, a bit sour and a bit tart- very approachable in terms of snacking on a handful or them or throwing them in your smoothie.
But I wanted to try something MORE.
Sure, we’re heading into too-hot-for-soup weather, but this spicy concoction will get you sweating (and therefore cool you off), and works well served lukewarm with a swirl of sour cream in it.
- 1 cup dried goji berries
- 1 can chopped tomatoes
- 1 cup broth or stock
- 1/2 large onion, diced
- 1 Tbsp oil, lard, or butter
- 1 small chili, seeded and chopped
- 1 tsp ground cumin, or turmeric, or cinnamon (or all 3)
- 3 dashes garlic salt
- Green onion, sliced, for garnish (optional)
- Soak the goji berries for 30-60 minutes, to rehydrate them.
- In a medium saucepan, heat the oil/lard/butter over medium heat.
- Saute the onion and chili for a few minutes, until the onion turns translucent.
- Add the tomatoes, goji berries, and spices, and cook (stirring occasionally) for another few minutes.
- Add the stock, bring to a boil, then reduce heat and simmer for 10 minutes.
- Blend the soup until smooth (we use a stick blender for convenience)
- Serve in bowls and decorate with garnish.
Optional: Kick up the spice with red pepper flake, or tone it down with a swirl of sour cream in each bowl as you serve.
